We're organizing a three-day outdoor food festival in Abu Dhabi next month, and I've been put in charge of the cold storage logistics for all the vendors, which is honestly a much bigger headache than anyone on the planning committee seems to realize. We've got over 25 different food stalls that need to keep ingredients chilled, beverages cold, and perishable items at safe temperatures throughout the event, and the venue doesn't have any permanent refrigeration facilities for us to use. I've been looking at various insulated container options and trying to figure out the right balance between having enough capacity for everyone and not ending up with giant tubs that take up all the space in the back-of-house area. I came across a supplier with various sizes and I'm considering an
insulated tub 660 litres for the main central cold storage point where vendors can pick up their chilled supplies as needed throughout the day. My concern is that this might actually be too big to handle practically, because once it's loaded with ice and product it's going to be incredibly heavy to move around if we need to reposition it. Also, how do these hold up when they're opened and closed constantly by different vendors? I don't want to invest in something that's going to lose its insulation properties after a weekend of heavy use. Would really appreciate any event planning or catering insights on this one.
